It depends on how you drive, how strenuous the terrain, tracks or tires, what size tires, weight, gearing, etc.
With that said, the last time that we went riding, I ran my Max II w/ 18hp from 10 am until 5pm without shutting it off except for lunch. I used about 3 - 3.5 gallons. Most of the time was slower speed riding with the occasional high speed run. Fuel isn't usually something you have to worry about for a one day ride.
I have a brochure somewhere that says your 16 hp motor's fuel consumption is .32 GPH @ 1/4 throttle @ 2,000 rpm.
An 18hp briggs gets .38 GPH.
I assume those numbers are with no load because that seems awful low to me. Don't get me wrong, these motors are very economical but I don't think they are that good.

I have the 23hp Kohler, and even with the bigger engine, I don't think I've used much more than two full tanks in the 22 hours I've used it so far. Hard to say because I (unnecessarily) topped it off twice for recreational riding at an atv park. I have the Avenger with a 26 HP Kohler. Tank holds 8 gallons. Fill up in morning and you will be good for the day. I always have lots of fuel left in the evening. Like you car, jackrabbit starts, WOT and higher speeds will consume more fuel. You should be good for the day with a full tank. As you put more hours on your machine you will become more familiar with its fuel consumption.
