      Ok, please stop with the pics RD!!!! I just ate a full course, and now im hungry again!!!! Your giving me ideas for an early Christmas or Birthday present to myself!! Great pics!!

        Something different.

        I built a little Hut, and Alder Smoked/Dryed some Northern Pike. It took 3 days to complete and turned out extremely well.

              Man that looks good Doc. I do a lot of southern BBQ ( I'm embarrassed to call what I do smoking : ) you sir are a true smoker...

                    Man that sure looks good, way down here in Georgia!! I know that Steelhead is going to be great!

                    The wife and I just came from a Brazilian Steak House Restaurant in Jacksonville, Florida and they smoke all of their meats. It was a great experience, 14 guys randomly visited your table with 14 different types of meat to slice and serve to you. I made to 1.4 slice rotations before I called it quits. Karen had to drive home, I was so full!!! Great times!!

                      Here it is, it turned out a bit salty, but still good. We tried crumbling some of it up, mixing with Cream Cheese, and using it for Dip, that turned out fantastic.
