When the motor is at idle, the transmission in neutral, should the driven clutch be spinning? Also, what kind of damage could happen if the transmission has too much oil in it. I just bought this machine last week, I don't know how long it was overfilled.

I wouldn't start in gear.
I suspect that too much oil in the gearbox would make a mess wherever the breather is.I haven't read here of problems of hydraulic locking or anything like that and don't know enough of the gearbox to guess anything else. I would drain and properly fill with the proper stuff and then drive it until a problem arises. Then, of course, come to 6x6world and let everyone know...
The FD620 will idle really well (warm) at about 750 RPM; I use a bungee to hold it higher until warm. The driven will spin sometimes and not others. I don't usually have gear grinding issues but when I do I reach for Dos Equis... whoops, different commercial... I have had luck with touching the choke a bit to get the RPM down enough to shift. (The choke trick is rarely needed)

Over filling a trans/gear box/engine with the respective fluid can cause foaming. The foam can displace the good fluid making it not lubricate properly, possibly even taking out bearings. The other thing it does is cause extra resistance, such as in the case of a crankshft dipping into the puddle of oil in an oil pan (why race engines use a windage tray). the oil slows the crank down robbing power and causes extra heat....that also reduces power. The heat makes the oil expand and the problem just gets worse....
